Some time back we bought a canister of steel-cut oats, ostensibly for use in making oatmeal cookies.
It turns out that rolled oats work much better in the recipe than the steel-cut ones do, so these oats have been idling in the cupboard, patiently awaiting their expiry date.
I am determined to use them before they expire, and now that the weather has turned cooler, I decided that oatmeal seemed like a nice breakfast to warm one up on a cold morning (especially when paired with lots of coffee).
Just to shake things up a bit this morning, I cooked them in oat milk instead of water to see how that would work. To quote George Takei: "Oh my!" The results were almost decadently rich, but not cloyingly so.
When I make these again, I am going to up the ratio of oat milk because these oats cooked down a bit thicker than I'd intended. I also tossed in some sultanas and maple crystals while it was cooking with very good results.
For the next batch (maybe tomorrow), besides adding more of the milk at the start, I am going to switch out the maple for brown sugar and nutmeg/cinnamon.
Finally, I don't think I gave myself a concussion this morning. As an added bonus, the pain in my head has made me forget about the sore, stiff neck with which I awoke.
