Once again, dinner consisted entirely of things from the farmers' market. Tonight it was breaded chicken breast stuffed with apples and brie, with black eggplant-flavoured pasta.

We were speculating on squid-ink as well when we were looking at it. The person ahead of us in line asked the vendor about the pasta and he assured her that the colour came from eggplant.

This pasta would go well with any number of sauces (the contrast of an Alfredo sauce would work well IMO), but it has enough of its own subtle flavour to stand on its own.

It turns out it the guy at the farmers' market misspoke; it is coloured with squid ink according to their web site. That makes more sense since eggplant would have made it more purple than black.

That sounds more like it, yeah.

I'm told that squid-ink is actually quite sweet. I know it's good in a risotto.
