We had some roasted chicken left over from Thanksgiving this year (and some pie too - but I dealt with that another way).  I am sure this recipe would work just as well with roasted turkey.

This is very similar to a curry that I posted earlier, but for some reason this one turned out better. 

The first thing that you will need is a can opener...


In a large, deep skillet or sauteing pan, add the following:


  • 1 can chicken broth (or you can use the broth you made from the chicken/turkey bones.  You did save the bones for broth, didn't you?)

  • 1 bag of boiler onions, peeled (the onions, not the bag). (Pearl onions work well too, but they're a bit more fiddly to work with).

  • 1 can of peas.

  • 1 can of corn (not baby corn, though that would probably be... interesting).

  • 1 large can of cooked yams.

  • Cut the leftover chicken/turkey into small bits and add as much as you like, depending on how meaty you like your curry.  Just make sure that you cut it small.

  • 2-3 tablespoons of curry paste.  Don't be afraid to add some powdered curry as well at this point.

  • 2-3 teaspoons of lemon juice.

  • 1 handful of little black things that you found in a bag in the cupboard.  They could be currants, raisins or even flies for all you know.

  • Add cumin to taste.



I didn't actually measure any of the quantities as I was adding them to this curry - I tend to cook by the "looks right/smells right" principle, but the quantities above are my best estimate of how much I used.

Bring the mixture to a boil, then reduce the heat, cover it and simmer it for at least an hour.  Stir it whenever you happen to be passing near the stove and remember to give it a stir.  You will know that it is ready to eat when the yams are practically melting under their own weight, and the boiler onions look like they are ready to explode on contact.  I tend to make my curries fairly mild these days, but this would work well if you decided to crank up the heat a bit.  You can never go far wrong by adding some cayenne pepper, nor would it hurt to add a healthy dollop of yogurt.  Yogurt does wonderful things to curry.

That do sound good. Boiler onions are the ones a tad larger than pearl onions? Roughly the diameter of a quarter?
