How to deal with Thanksgiving leftovers.

We had some roasted chicken left over from Thanksgiving this year (and some pie too - but I dealt with that another way).  I am sure this recipe would work just as well with roasted turkey.

This is very similar to a curry that I posted earlier, but for some reason this one turned out better.
